This Week:

Leftovers / Dad’s Enchiladas (They were a gift and have been in my freezer for way too long considering my love of enchiladas – I don’t have the recipe! …yet.)


Spaghetti & Meat Sauce with Baby Green Salad & Dijon Vinaigrette


Chipotle Chicken Fajitas & Mexican Style Red Rice


Caprese BLT with Baked Sweet Potato Fries


White Pizza with Spinach & Artichokes


Spanish Inspired Spinach & Chickpea Stew (This might end up waiting until next week depending on leftovers, cheese night, etc… but just in case…)
